OCR: WINE YEAST YEAST A genuine, pure strain of yeast should always be used because it gives a firmer sediment, a higher percentage of alcohol, a better flavor and aroma, and less chance of spoilage due to bacteria or wild yeast. Active, dry gradulated yeast is sealed in a foil envelope under inert nitrogen gas to increase it's self life. It will last about 1 year, slightly longer if refrigerated. Each pack is adequate for 1 to 5 gallons of must and can be added directly to the must without any prior starting. MONTRACHET WINE YEAST: Very good all purpose wine yeast. Especially recommended for red, rose and full bodied white wines. Item 4001 Per packet 39¢ ppd 3 for $1.00 ppd PREMIER CUVEE: This yeast, formerly called Prise de Mousse is also an excellant all purpose yeast. We recommend it as a good choice for white wines, second run wines and light fruit wines. It is derived from a French wine yeast and has been gaining in popularity in the U.S. for the last 5 years. Item 4002 per packet 39¢ ppd 3 for $1.00 ppd COTE des BLANCS This is a relatively slow fermenter. It gives a fine, fruity aroma and often leaves some residual sugar in the wine. Formerly called Epernay 2. Item 4004 per packet 39¢ ppd 3 for $1.00 ppd PASTEUR CHAMPAGNE: Works well for secondary fermentations in making sparkling wines. Very high alcohol tolerance. This yeast is also a good choice for fruit wines. Item 4003 per packet 39¢ ppd 3 for $1.00 ppd FLOR SHERRY: Some of the better sherries such as Amontillado owe their unique bouquet and flavor to a particular strain of yeast (Sacchoromyces Beticus) which sometimes forms a thick film on top of the wines. This yeast is also good for making ports and other dessert type wines.
